Healthy Broccoli and Cheese Casserole



Every Wednesday is pizza day at school for James. His lunch box and snack have been coming home empty so I thought pizza may not be enough. So to accompany his pizza, he has cheese and crackers, dinner roll, grapes and oranges.



He also have oranges and pretzels for his snack.



Tonight for dinner I made this recipe...I guess we are on a quinoa kick:) The kiddos LOVED this and requested that I pack it in their lunch. So for tomorrow, they have quinoa broccoli and cheese casserole, salad and some grapes.

Chicken Salad


Tomorrow the twins have leftover chicken salad, a plum, some blackberries and poppy seed salad dressing. The salad is one of my 'go to" meals....so easy and everyone eats it. It is simply lettuce, crunchy chinese noodles, mandarin oranges and cut up chicken nuggets. I use this deelish poppy seed dressing. Super yummy!

Last Lunch

Tomorrow the twins have leftover pizza, celery sticks and salad with a little balsamic vinaigrette. They are eating this lunch because it is the very last of the food in the fridge.

Leftovers


I meant to post this last night but we are in bedtime HELL with our two year old right now. Ugh. I know it is just a stage, but I am spending hours at night with him.

Tomorrow the kiddos lunch is from leftovers from Grandma Stella. She brought some dinner over and here are the yummy leftovers. Some sprouts and green onions, tomatoes and avocado, chicken and peas, carrots and pearl onions.

Enchiladas



Tomorrow we have leftover chicken and white bean enchiladas, star fruit, salad and a tangerine. I made these enchiladas for dinner tonight. The recipe is here; I added spinach because everyone in the family loves spinach and I don't make the green chile sauce...I just use a mild enchilada sauce. Every time I make this recipe it gets better...so yummy!

Bento for Mama

I am trying new angles because my new camera picks up the colors so easily...the pink bento pictures look so, well, pink.

James has a little snack bento for tomorrow. He has some watermelon, peaches, grape tomatoes ("mato's") and grapes.


The twins have grapes, a peanut butter sandwich, watermelon and a mandarin orange.


Since James has his own bento, I thought there is no reason I should not pack something for me. I packed myself some grapes, sliced peaches, salad with carrots and tomatoes, raspberry vinaigrette and some cashews.

New Bento

When we were down in Celebration seeing the snow in Florida, I stopped into the Hello Kitty store and found this cute bento. James has been sharing my pink one so I thought it was time for his first.



It has two little containers inside that are just perfect for James.



James has some cucumbers and tomatoes shaped liked stars, some peaches and some almonds.



The twins both have sliced oranges, a peanut butter sandwich, cucumber/tomato salad and some cashews.

Butternut Squash

We are still fighting off some sickness. Thomas stayed home from school today. He said he stomach hurt so not full fledged sickness...still I am trying to feed them well. Tonight for dinner we had this yummy (and easy) chicken salad and some butternut squash. The kiddos loved it and I had just enough to send in some leftovers.


Thomas has some chicken salad with ranch dressing on the side, some butternut squash, sliced oranges, sliced kiwi and some grapes.


Stella has some chicken salad with ranch dressing on the side, some butternut squash, sliced oranges, sliced kiwi and some grapes. Oh....and a Kit Kat bar for both:)
