Confetti Muffins

I almost did not pack lunches tonight. This week is super busy and I was feeling like a slacker. But...I did it:) This blog was meant to keep me inspired and it still does!

Thomas has turkey roll ups, some wheat thins, a 'confetti muffin' (I make the Jiffy corn muffin mix and I add shredded carrots, diced green and red peppers and frozen corn. Thomas notices ANYTHING different and he always asks what the red and green things are...I say it is the 'confetti' in the 'confetti muffins'.), a grape tomato kabob, two blueberry fig bars and some grapes.

Stella has turkey roll ups, some wheat thins, a 'confetti muffin', a grape tomato kabob, two blueberry fig bars (which almost did not make it into their lunches because they are soooo yummy!!) and some grapes.

For snacks they have another confetti muffin and some grape tomatoes and some grapes.

Grape Kabobs

I am packing my last lunches of the week tonight because I am heading out to an overnight trip tomorrow. Have I been away from the baby yet? Nope...not in eighteen months!! Tomorrow night I am going to sit down to a dinner and take my time! I will not refill one milk or juice cup! I will not have a bowl of yogurt thrown at me! I will not clean spilt milk!! Can you tell I am excited??

With that said, I have so much to do to get ready to leave for 30 hours;)

So for tomorrow, Stella has some honey wheat bread sticks, grapes tomatoes and some ranch dipping sauce, two turkey roll ups, grape kabobs and a corn muffin. These corn muffins turned out so yummy. I use a Jiffy corn muffin mix and add diced red peppers, matchbox stick carrots and shredded zucchini. Yummy! Veggie corn muffins:)

Stuffed Biscuits

Yay! One week of lunches down!! I did a little baking tonight. I made some turkey and cheese stuffed biscuits, some homemade chocolate chip cookies and some corn muffins. I was able to make my grilled peppers with goat cheese for a side dish tonight and we had two halves left over. I diced the peppers and cheese and mixed them right in with my corn muffins. Dee-lish!

Fun Cut Outs

I finally picked up some more cute bento supplies and wanted to try them out. Sooooo, even though the kiddos do not have summer camp tomorrow, I packed them a lunch for tomorrow. My sandwiches turned out....ok. I still need more practice but hey, if it makes packing lunch fun for me, I will take it:)

Thomas has a turkey dino sandwich (with one leg broken...awww), blueberries, yogurt raisins in my new silicone heart shaped cups, cashews and applesauce.

Stella has a turkey flower shaped sandwich with a little "S" shaped turkey sandwich on top, cashews, corn muffin with carrots and peppers, yogurt raisins, bread and butter pickles and applesauce.

James has turkey, sesame sticks, applesauce, yogurt covered raisins, bread and butter pickles and blueberries.

Enjoy your weekend!!

Friday Lunches

I always make the kids lunches the night before; it makes the morning go so much smoother. However, tonight I made the mistake of packing lunches while the twins were still up. I ended up having lots of requests and ended up packing two pretty different lunches.

Stella has two turkey with mustard dog shaped sandwiches, two pieces of pickled okra, blueberries, corn muffins baked with sliced carrots and diced peppers, cashews, bread and butter pickles and left over taco salad with tomato kabobs on top.

Thomas has a turkey fish shaped sandwich, blueberries, teddy graham crackers, cashews and applesauce. Can you tell which of the twins is a pickier eater??

When I made the twins sandwiches yesterday and today, I noticed that I had leftover turkey from the cut outs. Well duh! I just took that turkey and put it in James' lunch. He does not care what it looks like.

James has turkey, applesauce, halved grapes, three bread and butter pickles, halved grape tomatoes and blueberries.

Corn Muffin Lunch

The twins had the same lunch which was ham roll ups, wheat thins, mini corn muffins with carrots and peppers, cashews and strawberries. I love these corn muffins...they are so easy to make and I always throw veggies in while they cook:)

James had cut up turkey, wheat thins, a corn mini muffin and diced strawberries.
