Creamy Chicken


Tomorrow the twins have leftover creamy chicken, some fruit snacks and blackberries. This is my last lunch for a week or so....spring break, here we come!

Chicken Salad


Tomorrow the twins have leftover chicken salad, a plum, some blackberries and poppy seed salad dressing. The salad is one of my 'go to" meals....so easy and everyone eats it. It is simply lettuce, crunchy chinese noodles, mandarin oranges and cut up chicken nuggets. I use this deelish poppy seed dressing. Super yummy!

Mac & Cheese Muffins


Today the twins had a peanut butter sandwich, a plum, some fruit and cucumber slices.


I found this yummy recipe for baked mac and cheese with spinach (on Pinterest, of course!) and knew I had to try it for lunches.



So tomorrow they have mac and cheese, a plum, crinkle cut cucumbers and some blackberries.

Bacon Ranch Slow Cooker Chicken


Tomorrow the twins have leftover mixed veggies, brown rice and shredded chicken, cucumbers and watermelon.

I made this chicken from Pinterest tonight...so yummy!


Bacon Ranch Slow Cooker Chicken Recipe

Ingredients:
16oz boneless, skinless chicken breasts (4, 4oz breasts)
6 slices extra lean turkey bacon, cooked and chopped
3 cups plain, non-fat Greek yogurt
1 tbsp chicken bouillon base
1/4 cup fat free chicken broth
1 packet powdered Ranch dressing mix
1 tbsp fresh chives or parsley, chopped

Instructions:
Spray a crock pot with non-fat cooking spray and place chicken breasts inside (you can use frozen or defrosted).
In a large bowl, combine chicken bouillon base and yogurt until well blended. Then add in remaining ingredients and mix well.
Pour sauce over the chicken breasts.
Cook on high for 3.5 hours.
Shred chicken with a fork and garnish with fresh chives or parsley.
