Easy Friday Lunches


~Sigh~.....yesterday I packed Christmas tree shaped sandwiches and Thomas told me some of the kids at lunch thought they were too 'babyish'. Thank goodness Stella still like fun shaped sandwiches;)

First Day of December

Even though I have been instructed by my male second grader NOT to send in shaped sandwiches, I just couldn't stop myself:) Tomorrow they have grapes, broccoli, Christmas tree shaped sandwiches and carrots. I love, love, love Christmas time and hope I can make some fun lunches!!!

Fiesta Bowls


For dinner tonight, I made 'fiesta bowls'.....you could start with either brown rice or shredded lettuce and then add black beans, tomatoes, sauteed peppers, mushroom and onions, cheese, salsa and/or sour cream. Finally, the party in the bowl was topped with chicken. The kids loved building their own bowls and they ate it up;) Tomorrow, there are leftover fiesta bowls, rice cakes, a half of banana and some carrots.

Southwest Egg Rolls


Tomorrow the kiddos have leftover southwest chicken egg rolls with creamy enchilada dipping sauce, grapes and cucumbers.

These egg rolls were a hit with the family too! The Weight Watchers recipe is here.

Ingredients
3 spray(s) cooking spray, divided
1/2 pound(s) uncooked extra lean ground chicken breast
1 medium shallot(s), finely chopped
2 small tomato(es), finely chopped and drained
1/2 cup(s) canned kidney beans, drained and rinsed
1 tsp chili powder, medium-hot, or less to taste
1/4 tsp Durkee ground cumin, or other brand
1/4 tsp table salt
1/4 tsp black pepper
10 item(s) egg roll wrapper(s)
1/3 cup(s) canned enchilada sauce
1/3 cup(s) fat-free sour cream
1 Tbsp scallion(s), minced (green part only)

Instructions
Preheat oven to 400°F.

Coat a nonstick skillet with cooking spray. Add chicken and shallot; brown over medium heat, stirring frequently with a wooden spoon to break chicken into small pieces, about 5 minutes. Stir in tomato and cook until pulpy, about 2 to 3 minutes. Stir in beans, chili powder, cumin, salt and pepper; simmer for 1 minute to blend flavors.

Place an egg roll wrapper on a flat work surface with the corners set vertically (pointing up and down like a diamond shape). Arrange 2 slightly rounded tablespoons of filling down the center of wrapper, leaving 1/2 inch at the bottom and top.

Fold the bottom of the wrapper to the center, over the filling. Gently, but firmly, fold the left side of the wrapper to the center and then fold in the right side. Fold the top of the wrapper down to cover filling and seal any loose ends with water; repeat with remaining ingredients.

Place filled wrappers on prepared baking sheet; lightly spray surface of wrappers with cooking spray. Bake until wrappers are golden brown, flipping once, about 16 minutes.

Meanwhile, to prepare sauce, combine enchilada sauce, sour cream and scallion in a small bowl; mix well. Yields 1 roll and about 1 tablespoon of sauce per serving.

My Notes
I followed the recipe and they were deelish. I would defineately make them again. I would probably add black beans instead of kidney beans and also add spinach and corn.

Mini Chicken Cordon Bleu


Tomorrow the kiddos have grapes, carrots, mini chicken cordon bleu and some peaches. The chicken recipe is here and I will say, the family LOVED this recipe. It was super easy and deelish.

Ingredients
4 skinless, boneless chicken breast halves
1/4 teaspoon salt
1/8 teaspoon ground black pepper
6 slices Swiss cheese
4 slices cooked ham
1/2 cup seasoned bread crumbs

Directions
Preheat oven to 350 degrees F (175 degrees C). Coat a 7x11 inch baking dish with nonstick cooking spray.
Pound chicken breasts to 1/4 inch thickness.
Sprinkle each piece of chicken on both sides with salt and pepper. Place 1 cheese slice and 1 ham slice on top of each breast. Roll up each breast, and secure with a toothpick. Place in baking dish, and sprinkle chicken evenly with bread crumbs.
Bake for 30 to 35 minutes, or until chicken is no longer pink. Remove from oven, and place 1/2 cheese slice on top of each breast. Return to oven for 3 to 5 minutes, or until cheese has melted. Remove toothpicks, and serve immediately.

My notes: I found "thin chicken cutlets" and I didn't have to pound the chicken. I used provolone cheese and salami because that is what I had in the house. Super easy and everyone loved it!

Field Trip Lunches


Tomorrow the twins will be on a short field trip and here is their lunch. They each have peaches, yogurt covered raisins, grapes, pretzels, a half of turkey sandwich on a hoagie roll and some crinkle cut cucumbers.


And since James has been heading out with Dan-Dan on Tuesdays, I packed him a lunch too. He has yogurt covered raisins, pretzels, peaches, cucumbers, grapes and turkey roll ups.

I am back! I have had a rough couple of weeks and even though I packed lunches, I could not manage to post pictures. I am trying to get back into a good routine so here we go for tomorrow....otherwise known as Operation Halloween Detox.

Mini Lasagna

I have been wanting to make these forever! I finally did and they turned out great!



The recipe was super easy. Next time, I will trim my wonton wrappers. You can see my sides are bigger than the picture. I also added spinach to the recipe because my kiddos love it.

I realized that if I was going to make some Halloween lunches, this is the week to do it....here is what we have.



Tomorrow the kiddos have mini lasagnas, grapes with a pumpkin pick, green beans and a jack 'o clementine with a witch hat.

Lunch Leftovers

Veggie Calzones


Tomorrow the kiddos have a mini calzones, carrots, cucumbers, oranges and crinkle cut peaches.

I made regular size calzones for dinner and made the mini's for tomorrows lunch at the same time. I used the recipe from Epicurious found here. I simplified it quite a bit.

I sauteed some mushrooms and fresh spinach and some EVOO.


Added some red peppers and garlic.


Took store bought whole wheat pizza dough. Layered ricotta cheese, pizza sauce, the cooked veggies and some shredded mozzarella. Folded the dough up and sealed the sides.

It was nice because I could customize each calzone....more veggies for Stella, less for Thomas. I also used part skim ricotta, whole wheat pizza dough and added more veggies to make it a bit healthier. Served with a big salad...easy, peasy dinner and lunch for tomorrow.

Beef, Shiitake, and Snow Pea Stir-Fry



Tomorrow the kiddos have leftover stir fry (recipe below) served over whole wheat pasta, grapes, celery and Chinese crunchy noodles.

This was the first time I made this stir fry and it was delicious! The recipe is here.

Beef, Shiitake, and Snow Pea Stir-Fry

1 1-pound top sirloin steak, cut into 2-inch-long, 1/4-inch-thick slices
1 tablespoon Asian sesame oil
1 tablespoon minced peeled fresh ginger
12 ounces fresh shiitake mushrooms, stemmed, thickly sliced
8 ounces snow peas
1 bunch green onions, sliced, divided
1 cup fresh cilantro leaves, divided
5 tablespoons hoisin sauce
2 teaspoons chili-garlic sauce
1/4 teaspoon Chinese five-spice powder

Sprinkle beef with salt and pepper. Heat oil in large nonstick skillet over medium-high heat. Add ginger and mushrooms; stir-fry until mushrooms are tender, about 3 minutes. Add beef to skillet; stir-fry until beef browns but is still pink in center, about 1 minute. Add snow peas, half of green onions, and half of cilantro; stir-fry 1 minute. Stir in hoisin, chili-garlic sauce, and five-spice powder; sauté until peas are crisp-tender, 1 to 2 minutes. Season with salt and pepper. Transfer to bowl. Sprinkle with remaining green onions and cilantro.

**I omitted the ginger and Chinese five-spice powder because I didn't have any on hand. This dish was so easy...all three kiddos and the hubbie loved it. It is definitely going into our rotation.

Chili


We eat this chili all the time. I haven't made it in awhile because it still is so hot. But this weekend has been rainy and gloomy and seemed like the perfect day to make it;)

So for tomorrow, the kiddos have whole wheat scoops, carrots, chili and grapes.

I get asked if my kiddos have access to a microwave at school and they do not. Anything I send in, they eat cold. They are used to it now and never complain.

Our Chili Recipe

black beans
white beans
spicy chili beans
dark red kidney beans
diced tomatoes
half of an onion chopped
green, red and/or orange pepper chopped
ground chicken or turkey
a pinch of garlic
a ton of fresh spinach chopped up

Cook all ingredients in the crock pot for 4-6 hours.

Leftovers


I meant to post this last night but we are in bedtime HELL with our two year old right now. Ugh. I know it is just a stage, but I am spending hours at night with him.

Tomorrow the kiddos lunch is from leftovers from Grandma Stella. She brought some dinner over and here are the yummy leftovers. Some sprouts and green onions, tomatoes and avocado, chicken and peas, carrots and pearl onions.
