Pasta Salad



Tomorrow the twins have a pasta salad with some veggies, mozzarella cheese and pomegranate vinaigrette, pears, kiwi, veggie sticks and peaches.



James has some pasta salad, peaches, veggie sticks, pears and a peanut butter sandwich on a dinner roll.

Thomcord Grapes

I have received a lot of kind words about my lunch blog recently. Thank you so much for stopping by and I appreciate hearing from you!

The most frequently asked question I get asked is, "Do your kids really eat your lunches?". That makes me laugh a little....like I pack fake lunches for the blog and my kiddos are eating Lunchables.

Yes, my kiddos really eat their lunches.

I believe that my kiddos are still young enough where I can put something in front of them and they will eat it. I pack crap, they will eat crap. I pack healthy choices, they will eat healthier. They each have food preferences but overall their lunches come home pretty empty.

I recently was out of all of my lunch packing staples and I asked my husband to run to the store. Here are the 'staples' I need to pack healthy lunches:

bread
Publix dinner rolls
lunch meat
cucumber
grape tomatoes
spinach
carrots
celery
bananas
watermelon
oranges
grapes

I usually have the following on hand:
goat cheese
feta cheese
peanut butter
hummus
whole wheat pastas

Now you will not see all of the above in the lunches for tomorrow but that list would get me through a couple of days. Doesn't that seem pretty basic? Easy peasy? I try to add new foods and keep their lunches interesting, but packing healthy choices is easy.


For tomorrow there is pasta salad (whole wheat penne, tomatoes, spinach and feta cheese), carrots and celery, Thomcord grapes and a dinner roll.

Berry Medley


Tomorrow the twins have pasta salad (whole wheat ravioli, tomatoes, feta cheese and roasted red pepper and parmesan dressing), a berry medley of raspberries, blueberries and currants, carrots and celery with ranch dipping sauce and nectarines.

Tomorrow the twins have oranges, turkey roll ups for Stella (Thomas wanted ham and cheese roll ups), pasta salad (pasta, tomatoes, corn, broccoli, goat cheese) and sliced peaches.

First Day of 2nd Grade


And they are off....Tomorrow is the first day of 2nd grade! I am really looking forward to getting back into a school routine but I don't think any of us are ready for school to begin.

Tomorrow, Thomas and Stella have sandwiches, some blueberries and sliced pears, oranges and some pasta salad (whole wheat pasta, corn, broccoli, tomatoes and goat cheese mixed with a little ranch dressing and greek yogurt).

I definitely have the hang of packing lunches and this year I want to try to make them a bit more creative. I know I am not starting out with the most creative lunch, so we will see how I do with my goal;)

Home Stretch

I am in the final stretch for packing lunches!! I can not wait to have the summer 'off'. I want to regroup and try some new recipes that I think will be great for lunches next year.


On Tuesday, the twins had turkey sandwiches on a dinner roll, tomatoes, carrots, oranges and grapes.


On Wednesday, the twins had leftover pizza, celery sticks, oranges and watermelon.



On Thursday, the twins had oranges, blueberries, whole wheat pasta salad with spinach, tomatoes and feta cheese and some carrots.


And for tomorrow, the twins have watermelon, leftover sweet and sour chicken, oranges, a fortune cookie and some blueberries.

Pasta Salad



I basically could pour ranch dressing on anything and my kiddos would eat it...so I have been experimenting with different, 'healthier' versions of dressing. This pasta salad has half ranch and half plain greek yogurt on it and the kids never noticed. Tomorrow they have pasta salad with corn, peas and edamame, cherries, watermelon and cucumber.
