Turkey Chili

I am still trying feed the kiddos well to fight off any sickness trying to sneak in. I made some homemade turkey chili tonight and loaded it up with lots of yellow and orange peppers, some red, white and pink beans and also diced some fresh tomatoes. It was yummy! I also had leftovers:)

Thomas has leftover turkey chili, a witchy plum, some blue chips and then some star fruit (which he loved!) and some kiwi.

Star Fruit

I feel like the twins are on the brink on getting sick. I have heard a sneeze here and there and they have been extra tired at the end of their day. So, I have made sure they are taking their vitamins, tried to get them in bed earlier and focused on packing healthy lunches. It is one of the ways I can try to protect their little immune systems. I cooked salmon and yummy homemade butternut squash for dinner and here is their lunch for tomorrow:

They both have a turkey roll up, some veggie sticks, cut up strawberries, sliced oranges and some star fruit and sliced cucumber. This is the first time I have ever tried star fruit...so yummy!

Does a Pumpkin Pick Make it Spooky?

I am so overwhelmed on all fronts this week. Work is stressful and I do not have enough time to do it and at the same time I feel the strongest pull to be with my kiddos this week. I am ridden with mommy guilt but....one foot in front of the other. This is lunch...not a super one but better than what they are serving in the cafeteria:)

Both Thomas and Stella have peanut butter in mini pita's, some raw veggies, mandarin oranges and two bat cookies.

Jack-O-Tangerine

Thomas and Stella's lunch looks the same so I am only posting one picture.

They have the last of the grapes, a jack-o-tangerine, heart shaped sticky rice and some pasta salad, and a mummy dog...or is it a ninja?? Ha! The mummy dogs I packed earlier this week were too big so I made half mummy dogs:)

I can not wait to check out the other lunches at What's for Lunch Wednesday!

Confetti Muffins

I almost did not pack lunches tonight. This week is super busy and I was feeling like a slacker. But...I did it:) This blog was meant to keep me inspired and it still does!

Thomas has turkey roll ups, some wheat thins, a 'confetti muffin' (I make the Jiffy corn muffin mix and I add shredded carrots, diced green and red peppers and frozen corn. Thomas notices ANYTHING different and he always asks what the red and green things are...I say it is the 'confetti' in the 'confetti muffins'.), a grape tomato kabob, two blueberry fig bars and some grapes.

Stella has turkey roll ups, some wheat thins, a 'confetti muffin', a grape tomato kabob, two blueberry fig bars (which almost did not make it into their lunches because they are soooo yummy!!) and some grapes.

For snacks they have another confetti muffin and some grape tomatoes and some grapes.
